Mrs C’s Autumn Soup

Peter’s mom made this for his family growing up. It’s similar to my mom’s ‘Hamburger Soup” we would have at the cottage when my mom was cooking for a large crowd with whatever staples were in the island fridge. Old school delicious. Yes there is consomme, if you can’t handle it, swap for beef stock. Kids love it. Its so good and a filling hot pot on a winter day.

ELENA'S CURRIED CORN CHOWDER

Elena Embrioni, my vital recipe tester and contributor, makes wonderful soups – hearty and full of flavour. Like me, she doesn't typically write her recipes down. SUMMER ENTERTAINING: BEET + RHUBARB SALAD

I first came across a far more complicated version of this recipe at the much adored. Ottolenghi in Notting Hill, UK. His little shop and multiple cookbooks capture the style, presentation and ingredients that hit home. This is my short cut simple version with a nod to Yotam Ottolenghi. I’ve done versions of this salad whenever I am asked to bring something potluck to a dinner and am often asked for the recipe. So finally, I have worked it through for you to enjoy, wow and dazzle and pass it on.
