Chocolate Chip Zucchini Loaf

There’s nothing like knowing there are vegetables in desserts that my kids love. When the kids first tested this they asked if it was banana bread. My little white lie was “Sort of.” After rave reviews, I laughed that they’d eaten vegetable dessert thanks to the zucchini. The teen response was in the vein of “You don’t need to pull those stunts anymore, Mom.” If you have picky eaters, know that the zucchini adds moisture, has very little flavour, and is practically invisible, as it’s grated. It’s so moist and delicious the word “zucchini” won’t even come up.

Trail Mix

Driving up to my parents cottage we used to pass the Iroquois Cranberry Growers which sadly is no more. I’d justify cranberry consumption in our house with the natural local thought. Now I look at the sugar content in the bulk option in slight horror, and I’m not clear where they are coming from yet I still default to stocking them for trail mix and granola. Seek out and buy good ones. This is simply a guide, add and subtract items as you wish.

Best Ever Cottage Chocolate Chip Cookies

For years, I have been asked for the recipe for my "best ever" chocolate chip cookies. Well, here it is. The secret is to slightly underbake them, which keeps them chewy and tasting a little bit like that raw cookie dough we all secretly love. My sister-in-law Amanda has stolen the torch for making the best batch - I suppose they are a bit of a craft. My mom has to hide these from my husband or they disappear in seconds.
